A wine with a cristal-clear color with notes of white peach and citrus peel. This wine is pure white Grenache (35 years). It has a fresh taste in mouth with a final mineral touch. Well suited for apéros, fish dishes or light meals - 13 %.

A wine with a cristal-clear color, a nice complexity with a floral smell and a long final taste in the mouth. This wine is made from white Grenache (35 years) and Clairette du Languedoc (35 years). It has been aged in an Austrian high quality Stockinger barrel for 7 months. Drink it along with a starter, a fish dish and/or a dessert. - 12,5 %.

Driven by a philosophy that favors balance and a life in symbiosis with nature, we use solely organic and biodynamic practices and we harvest 100% manually.

We produce between 15,000  to 20,000 bottles a year, with an average yield of 25 to 30 hL per hectare, and we have 7 different wines: 5 reds and 2 whites.

All our wines carry a saying, borrowed from a philosopher or a writer, that we choose carefully in order to share with you the spirit that drives us and our passion for wine making.

In order to preserve our health and the health of our clients, we use very few sulfites: between 10 and 35 mg/liter, i.e. less than 50% of what is allowed for biodynamic certifications (see further down).

AGRICULTURE FRANCE

We want to put the emphasis on the quality of the wine by maintaining a production rate between 15,000 and 20,000 bottles a year (from 10 to 35 hL/ha depending on the grape variety).


Our wine creation at La Grange de Bouys is a demanding but virtuous process. All the work that we accomplish in our vineyard aims at producing well-balanced wines for pleasure and conviviality, while preserving a natural ecosystem. Diversity is of very high importance in organic and biodynamic practices. And we are convinced that we can create quality products all the while improving our local environment!


About sulfites...

In organic agriculture, the maximum total level for SO2 (sulfites) allowed within European specifications are of: 

  • 150 mg/liter for whites and rosés
  • 100 mg/liter for reds


In biodynamic agriculture, the total level of sulfites allowed within the Demeter specifications are of:

  • 90 mg/liter for whites and rosés
  • 70 mg/liter for reds


Our levels of sulfites are between 10 and 35 mg/liter, depending on the vintage and the wine. Our goal is to obtain a wine that is biologically stable for transportations, but also and above all to preserve our health and the health of our clients while avoiding headaches...

CARIGNAN

This structured and well-balanced wine with a dark color has a fresh and juicy taste in mouth with flavors of black fruit. His light tannin will let it age several years. Made almost exclusively from old Carignan vines 66 years old and a little Syrah. Also sold in Magnum. Perfect suited to meat dishes and cheese - 13,5%.

SAINT ANDRIEU

Made from Syrah (35 years), black Grenache and Cinsault, this dark purple colored wine has a a nice complexity with flavors of truffles and moka and a dense yet fresh taste in mouth. A part of the Syrah was aged 6 months in an oak barrel. It can age 5 to 10 years and will go perfectly well with charcuterie, meat dishes and cheese. Serve it in a carafe in ordertoreveal its full potential -13,5%.

This wine is made from 5 grape varieties, including 3 "rare" varieties: Aspiran, Morrastel and Terret Noir. The result is quite surprising for a Languedoc wine, a subtle balance of floral flavors lifted by some light peppery flavors and a final vanilla taste in mouth - 11,5%.

VINIFICATION


AT DOMAINE GRANGE DE BOUYS WE CREATE OUR WINES


We are looking to obtain the best quality for well-balanced organic wines. Our wine-making philosophy is simple: in order to make good wine, it is essential to use the best grapes.


We cultivate old grape varieties that are adapted to the local climate. In this terroir, we produce wines based on typical Languedoc varieties: Carignan (66 years), black Grenache, Cinsault, Syrah, white Grenache, and Clairette du Languedoc (35 years).

Furthermore, since 2018 we have grafted ancient and rare Languedoc grape varieties: Aspiran, Morrastel, Terret noir, Aramon, and some more in 2019: Aspiran gris, Piquepoul noir ... These varieties form our wine "Le Médiéval".


Our vine plots are located close to our cellar (800 meters maximum). Our domain being small, we are able to undertake the harvest in each plot at the exact moment when the grapes have reached their optimal maturity.  We harvest by hand the best grapes from our old vines, which are then transported in small recipients to ensure their perfect integrity until they reach our cellar. We make wines as simple and natural as possible with a very limited use of sulfites.


For the red wines, the grapes are destemmed and each variety is vinified separately, with some exceptions, in stainless steel tanks from 5 hL (hectoliters) for the smallest ones to 30 hL. Once the fermentation is over, the free-run wine is transferred to another tank and the marc goes through our pneumatic press. Then, we age our wines in stainless steel tanks or in oak barrels of 500L or 600L.


For the white wines and the rosé, the grapes are pressed directly and the juice is cooled down and clarified. The fermentation takes place at a controlled temperature in order to preserve the full range of flavors and savors of the wine. Since 2016, we make our white wine in tanks and barrels.
